The most excellent ramen shop in Ichikawa-city, I recommend you ramen shop “SAI”.
SAI means natural, according to the shop owner, Mr.Kenji Otsuka.
He was originally French chef and he was in HOTEL DE MIKUNI which was Japanese first class French restaurant. After that, he was hired as French chef of some minor French restaurant in Ichikawa-city. But the owner was very bad and he did finally quit the job.
One day he watched on TV and he found that his former colleague in MIKUNI became very famous ramen chef near Ichikawa-city. So he decided to start ramen shop.
In September 1st 2001, he opened ramen shop “SAI” in Ichikawa-city, Chiba-prefecture, Japan.
At that time, the menu was SHOYU(soy sauce, JPY650.00), TONKOTSU(pork bone and a little bit fish mixed, JPY650.00), SHIO(salt, JPY650.00) ramen. And the most characteristic point is the roasted pink pork topping. He used French technique for creating original roast pork. It takes to cook it for three days.
